Polly’s Hospitality and Culinary Arts Institute (PHI) Diploma and Certificate programs provide comprehensive, seamless educational programs that give students the knowledge and skills in the culinary arts. The Diploma program prepares graduates for executive chef, sous chef and restaurant manager positions. The Certificate program prepares the student to enter the following positions: baker, broiler cook, expediter, fry/sauté cook, pantry cook, pastry cook, soup and sauce cook, and vegetable cook. PHI programs emphasize technical and theoretical knowledge combined with the practical applications of cooking, baking, serving, and management skills needed for success in the food industry.
During the 44 week program students are exposed to a wide variety of skills and experiences that benefit them as they begin or advance their career. Upon completion of the Diploma program, a student is eligible to apply to sit for the certification test with the American Culinary Federation (ACF) to become a certified culinarian (CC). The student will take the ServSafe Certification examination as part of both the Certificate and Diploma programs.
Unlike other culinary programs in Georgia, the PHI program allows students to use their skills in actual restaurant, catering and cafeteria settings, as well as baking and pastry. Students have the opportunity to work with executive chefs, experienced sous chefs, and an experienced restaurant manager throughout their program. The maximum number of students per class is 24. The maximum student to instructor ratio is 24:1.
